What it is
A site is a domain served from a document root inside the account's home. The first site of an account uses /home/<client>/public_html; the others use /home/<client>/<domain>/public_html. Subdomains are created as sites.
What it is for
Hosting a website, a shop or an application for a customer, with its own PHP-FPM pool, certificate and server options, without editing server configuration.
Limits
A new site cannot take a name that belongs to another client's domain, DNS zone or subdomain tree, nor a name the node reserves for itself. The number of sites is capped by the client's plan; there is no limit imposed by the panel itself.
